Samoas Wookie Cookie Pretzel Bites. That’s a mouthful. But I wanted to be sure to include all the aspects of this delicious treat in the title so you wouldn’t miss out! Let’s break it down.

Samoas Cookies

Samoas cookies, if you live under a rock, are the best Girl Scout Cookies. Don’t worry, we can still be friends if you’re wrong about your GSC choice. They have a crisp short-bread-esque base, topped with toasted coconut that’s been coated with caramel, and smothered (drizzled and dipped) in chocolate.

Pretzel Bites

Pretzel bites as I know them are square or mini twist pretzels topped with a chocolate candy, baked just until the chocolate is softened, then usually topped with a walnut. I’ve also seen Christmas versions with a pretzel topped with a red and white Hershey’s Kiss and a red or green M&M. It wasn’t until a couple years ago that someone at a potluck introduced me to the sandwich-style pretzel bites. That one I tried was made with 2 pretzels with a mini Reese’s Cup in between, then half dipped in chocolate. Delicious!

Wookie Cookies

Why wookie cookies? Because it’s nearly May the Fourth, of course! If you’ve been following me, you know I love making themed food for parties or movie nights. These are perfect for snacking on while watching Star Wars or for packing in lunches on May 4th (though who wouldn’t love seeing these in their lunch any day of the year?). I’m calling them wookies cookies because they’re shaggy and kind of remind me of a wookies long fur!

Optional Caramel Sauce

This recipe is the easiest version. If you’d like to step it up another notch, use this caramel sauce recipe to hold the coconut on instead of chocolate. It’s from Domestic Superhero and it’s my favorite simple recipe that’s basically fool-proof. It uses just 3 ingredients and comes together without a candy thermometer. I usually make a batch and store any unused caramel in a jar in the fridge. I use it for pancakes, apples, coffee, and of course my Apple Butter Pecan Waffles.

Samoas Wookie Cookies Pretzel Bites

Incredibly easy chocolate caramel pretzel bites topped with toasted coconut. With a little decorating, they’re the perfect wookie cookies for your next Star Wars movie night!

Ingredients

20 Rolos candies

40 pretzel squares

½ cup chocolate chips*

½  cup shredded coconut 

Method

Preheat your oven to 350. 

Toasted Coconut

Line a large baking sheet with parchment paper. Spread coconut over sheet pan, as evenly as possible.

Bake for 8-10 minutes, until lightly browned. Be sure to stir every couple of minutes to ensure even browning.

Set aside to cool. Leave the oven on!

Pretzel Bites

Line another baking sheet with parchment paper.Note: if you don’t have another, you can carefully move the parchment paper with the coconut somewhere to cool.

Place half of the pretzels in a single layer on the sheet pan. Top each with an unwrapped Rolo.

Bake for 3 minutes.

Remove the pretzel bites from the oven. Carefully while they’re still hot and the chocolate is soft, top each with another pretzel and press down slightly (like you’re making a Rolo sandwich).

Melt chocolate in the microwave, 30 seconds at a time, stirring between each until smooth. Switch to 10 second intervals once you can stir it to avoid burning.

Add a small dollop of chocolate or caramel sauce* to each pretzel to act as glue.

Carefully top each pretzel bite with coconut.

Cool until set.

Using a chopstick, drizzle chocolate over pretzel bites. You can get creative here if you’d like and make Chewbacca’s belt.

Cool until set. Pop into the refrigerator or freezer if you’re in a hurry!

Notes

Be extra: if you want to fully embrace the Chewbacca vibe like I did, you can use white pearls for decorating cakes or some white chocolate. Get creative with what you can find!

I don’t really buy milk chocolate anymore. I much prefer dark chocolate, so it’s all I buy. The trouble is it’s a little trickier when you want to melt it. I used an old trick from making candy buckeyes and added a little edible wax to help it be a little easier to drizzle. You could use candy melts if you don’t have the best luck with melted chocolate!

In case you missed it in my intro, you can use some caramel sauce to act as the glue for the coconut if you’d like. I love the easiness of this recipe from Domestic Superhero. If you do this, use ⅓ cup chocolate chips instead of ½ cup.
