5 Ingredient Peanut Butter Cookies
These simple cookies are a magical wonder of baking. Who knew mixing peanut butter, sugar, an egg, baking soda, and salt would create cookies? That’s right–these cookies don’t use flour!
The type of peanut butter you use for this is key. If you use something too organic or with natural sweeteners, they’ll turn out completely different than a cheap peanut butter. I used a cheap peanut butter sweetened with honey this time and they expanded a lot more than a classic peanut butter. Test out different ones and see which one you like best!
5 Ingredient Peanut Butter Cookies
Makes 16 cookies
Ingredients:
1 cup creamy peanut butter
¾ cup sugar
1 large egg
¼ tsp salt
¼ tsp baking soda
Optional:
½ tsp vanilla
½ tsp cinnamon
Method:
Mix all ingredients. Place in the refrigerator for at least 10 minutes to help it solidify.
Preheat the oven to 350F
Line a baking tray with parchment paper or spray with a non-stick cooking oil.
Scoop 1 Tablespoon of dough per cookie and roll into balls. Place 2” apart on a baking sheet.
Use a fork to press dough into cookie shapes, creating that signature peanut butter cookie #.
Bake for 10 minutes. Remove when cookies just start to brown and crisp up on the edges.
LEAVE ON TRAY TO COOL. They aren’t as sturdy as traditional cookies while hot.
Store in an airtight container and enjoy within 4 days.
Notes:
You can make these into larger cookies by using 2 Tablespoons of dough. Make sure you place them at least 4” apart! I think this makes them extra chewy too. This recipe makes 8 large cookies.
You can try mixing peanut butter with another nut butter, but this will change the final cookies. Equal parts peanut butter and cashew butter is my favorite, but the cookies won’t expand as much.
