Jalapeno Popper Deviled Eggs for 2
What happens when you take a deviled egg recipe and tweak it? You get delicious things like jalapeno popper deviled eggs! This recipe makes just 2 servings, perfect for just you and your spouse/roommate/leftovers?
Jalapeno Hot Sauce
In place of vinegar or pickle juice, you use jalapeno hot sauce. You can pick up some from your favorite local hot sauce shop, or use something like Tabasco's green hot sauce. I'm not a huge fan of super spicy foods, so I always keep a bottle on hand to counter my husband's crazy hot sauces made with ghost peppers. We're also substituting the mayo for cream cheese for an added richness!

Jalapeno Popper Deviled Eggs for 2
Makes 6 deviled eggs
Ingredients
3 eggs
1 ½ Tablespoon cream cheese, softened
½ teaspoon mustard
½ teaspoon jalapeno-based hot sauce
Salt & pepper, to taste
Cheese Crisp Garnish
2 Tablespoons finely shredded cheddar cheese
Method
Bake Cheese Crisps
Preheat oven to 425F.
Line a baking sheet with parchment paper. Make small piles of about 1 teaspoon of shredded cheddar a few inches apart. Once the oven is preheated, bake for about 5 minutes, keeping a careful eye on it so it bubbles, but doesn’t start to brown. Allow to cool on the pan until they’re solid.
Make the Eggs
Bring water to boil in a medium pot. Reduce heat and wait for bubbles to calm. Using a slotted spoon, gently drop in eggs. Return temperature to medium high; set timer for 11 minutes.
Meanwhile, add ice and water to a cereal bowl. After 11 minutes is up, scoop out the eggs and place in ice bath.
Tip: crack eggs once they’re cool enough to handle and let sit in water. It’ll make them easier to peel!
Once cooled, peel eggs.
Slice eggs in half lengthwise. Gently remove the yolk and place yolks in a small bowl.
Mash the yolks with a fork. Mix in cream cheese, mustard, hot sauce, and salt & pepper.
Use a spoon or icing bag & tip to add yolk mixture back into egg whites.
Garnish with cheese crisp and optionally a slice of jalapeno.
Notes
Get spicy! Add a slice of jalapeno to your cheese piles before baking them.
I also recommend keeping a bottle of hot sauce nearby for anyone who wants to splash a little extra hot sauce on.
I used Tabasco’s green hot sauce, which is milder than their original and made with jalapenos.
