Jalapeño Popper Pigs in a Blanket for 2

Jalapeño poppers are a classic finger-food, as are pigs in a blanket. What would happen if you combined them?

For my followers who aren’t familiar, American pigs in a blanket are hot dogs wrapped in a pastry. In the tradition of making things as easy as possible, they’re often made with premade crescent roll dough you can buy in the refrigerated section. I learned during my time in England that the Brits also have a hot dog recipe they call pigs in a blanket. These are hot dogs wrapped in bacon, which are also delicious.

Jalapeño Poppers

Jalapeño poppers are made a few ways, but the main thing is to fill a hollowed out jalapeño with a cheese mixture and bake. Some recipes wrap them in pastry or roll them in panko before baking for added texture. There are many recipes that include bacon too!

Jalapeño Popper Pigs in a Blanket for 2

2 servings

We’re combining jalapeño poppers and pigs in a blanket for a spicy flavorful finger food

Ingredients

2 hot dogs

½ sheet puff pastry

2 oz cream cheese, softened

1 large jalapeño

½ tsp garlic powder

⅓ cup shredded cheddar cheese

1 tsp melted butter

Pretzel or coarse salt

Method

Prep

Preheat oven to 400F. Line a sheet tray with parchment paper.

Quarter jalapeño lengthwise and remove seeds. Set aside.

Add cream cheese, garlic powder, and cheddar to a small bowl and mix to combine.

Unroll puff pastry so it lays flat. Cut into 4 strips.

Cut hot dogs in half lengthwise.

Assemble

Fill jalapeño strips with cheese mixture. Add to one end of a strip of puff pastry.

Add hot dog to the same end. Roll in a spiral, covering the fillings to keep the cheese mixture in while baking.

Repeat for remaining jalapeños and hot dogs.

Place on sheet tray a couple of inches apart. 

Brush with melted butter. Sprinkle with salt.

Bake for 15-20 minutes, or until golden brown.

Serve hot.

Notes:

I added some sesame seeds to the tops of mine before baking for a little extra texture.

If you can only find smaller jalapeños, you'll need more. The ones I found were huge and about the size of my hand! Just keep in mine that smaller peppers usually = spicier. Cut thinner strips if needed!
