Mulan-inspired Congee with Eggs & Bacon

This rice recipe is based on a dish from a beloved Disney movie. I’m using an Instant Pot for this, making it really simple to make. 

Congee is a rice porridge and a classic breakfast dish in China. Mushu makes it for Mulan one day topped with eggs and bacon shaped like a smile. 


Mulan-inspired Congee with eggs & bacon

2 servings

Ingredients

Congee

⅓ cups rice

2 ⅔ cups water

Dash of salt

Toppings

2 eggs

2 slices bacon

Optional: green onions

Method

Rinse rice.

Add congee ingredients to Instant Pot. Set manual setting to 22 minutes, high pressure.

Natural release (when time’s up, allow IP to naturally release the pressure).

Makin’ the Bacon

Shape the bacon into a smile shape and pan fry until cooked to desired doneness.

Drain on paper towels until ready to assemble.

Soft-boil Eggs

Bring a pot of water to boil, being sure there’s enough water to cover eggs later.

Reduce heat if the water’s boiling too rapidly and wait for it to calm. Gently drop in eggs with a spoon. Return heat to a boil.

Set timer for 7 minutes (up to 9 if you don’t want them to be as jammy).

While eggs boil, add ice and cold water to a small bowl.

When eggs are done, carefully remove from the pot with a spoon and submerge in a bowl of ice water. Gently peel when cool enough to handle.

Slice in half just before serving.

Divide congee into 2 wide mouthed bowls.

Top with eggs and bacon, arranging to look like a face.

Optional: add sliced green onions as "hair" to add extra freshness.
