If you haven't seen the new season of Chilling Adventures of Sabrina, it's now on Netflix! I've created a cocktail & snack you can make to enjoy while you watch the new season or catch up from the beginning.

I don't know about you, but I like to be a little extra sometimes. Today I'm going to create a little themed viewing party for myself. These recipes are for a single serving, but you can easily make more if you want to watch with friends.

What's on the menu?

  • Strawberry dark & stormy

  • Popcorn (to keep things easy this time)

Cheesecake Red Velvet Brownie in a Mug

1 serving

Ingredients

2 oz cream cheese

1 T granulated sugar

2 T unsalted butter

2 T granulated sugar

1 T light brown sugar, packed

1/4 t vanilla extract

pinch of salt

1 egg yolk

red food coloring (I used gel)

1 T water

4 T flour

1 1/2 T cocoa powder (I used dark)

2 T dark chocolate (I used morsels, but you can use chopped or chips)

Method

Gather two mugs or ramekins (I used mugs for testing, but a ramekin and a little Pyrex bowl for the photoshoot). In the smaller one, add cream cheese. Microwave until softened, about 15 seconds. In the main one, add butter. Microwave until melted, about 30 seconds.

Add sugars:

1 T granulated sugar to the cream cheese

2 T granulated sugar + 1 T light brown sugar to the butter

Stir both. Set cream cheese mixture aside.

To the butter mixture, add vanilla, salt, egg yolk, water, and a couple drops of food coloring. Mix. (Don't dump in everything at once, no matter how tempting that sounds! These ingredients need to be mixed well or you'll be able to tell. Trust.)

Add in flour and cocoa powder. Mix. Add chocolate chips and mix.

Add a couple of drops of red food coloring on top of your batter. Dollop cream cheese mixture on top. Using a butterknife, carefully swirl the cream cheese mixture into brownie batter. You will run into chocolate pieces. Try to make it so you can see the red in swirls, but don't mix it in too much so you can still see the separations in brownie and cream cheese.

Microwave uncovered for 60 seconds. My microwave is 1000 watts and this is the perfect amount of time.

The brownie will be very moist when you take it out. The key to telling when it's done is annoyingly letting it sit for several minutes first and then cutting into it. The top will still be shiny, which can be misleading. You can easily overcook it if you put it in longer, so be careful! Remember that ice cream fixes an over-baked brownie.

Let brownie cool while you work on the rest of your goodies!

Strawberry Dark & Stormy

What is a dark & stormy? It's basically a Moscow Mule, just with dark rum instead of vodka. In this version, we're adding strawberries for an added compliment to the chocolate in the brownies.

Strawberry Syrup

Ingredients

1/2 cup strawberries (fresh if they're in season, but I used frozen this time)

1/3 cup granulated sugar

1/3 cup water

Method

In a small saucepan, add water and sugar. If you're using frozen strawberries, add them now too. Bring to a boil. Stir occasionally. You're looking for the sugar to dissolve and the strawberries to soften and start to give off color.

Once the sugar is dissolved, if you're using fresh strawberries, add them now.

Take the pan off the heat.

Mash the strawberries. Let the mixture sit for an hour.

Strain the mixture into a jar or similar storage container. Refrigerate and use within 1 week.

Strawberry Dark & Stormy

Ingredients

30 ml strawberry syrup (see above)

15 ml fresh lime juice, about half a lime

60 ml dark rum (or just 50 ml if you're like me and bought the little bottle)

ginger beer to top off (I love Fever Tree if you can find it! You can also try a ginger ale soda and find a milder flavor if you prefer)

Method

Measure and add strawberry syrup, lime juice, and dark rum to a chilled glass. Add frozen strawberries or ice to chill. Stir.

Top with ginger beer, to taste. I use a full mini bottle. Gently stir.

Serve.

(If you haven't made the popcorn yet, be sure to pop your drink into the fridge while you do so!)

Note: Try making this without the rum for a virgin option! Let me know in the comments how it turns out.

Behind the Scenes

Originally I was going to just have the cocktail and brownie, but after my rounds of testing, I knew I needed to add something to balance out the sweetness of the brownie. I kept it simple with popcorn this time, but I really like the idea of having a couple of snacks for this series!

The brownie is really rich and sweet, but I'm really happy with how the texture turned out, especially for being made in the microwave! If I made this again in the Spring, I'd definitely add fresh berries on top.

The cocktail I love the kick the ginger beer brings, which helps balance out the brownie.

The popcorn, well, it's a classic. It breaks up the sweetness of the brownie and provides a little reprieve from the spicy ginger.
