Cheddar Herb Biscuits

Move over Red Lobster, I've got your new favorite cheddar biscuits right here!

These delicious cheddar herb biscuits are made with Bisquick, Greek yogurt, cheddar, and your herbs of choice. They’re easy to throw together for an elevated take on biscuits next time you need a side for your dinner.

Cheddar Cheese

These biscuits do best with freshly shredded cheddar, but you can use pre-shredded if you prefer. I have a rotary cheese shredder that I love, so I can easily shred enough for recipes like this. Pre-shredded cheese does come with anti-caking agents, so it’s possible your dough will end up a little drier. There’s an easy fix for that though–add a splash more milk!

Fresh Herbs

I love using fresh herbs in this recipe because it takes it to a new level and adds an earthiness and freshness that can’t be beat. In a pinch if you’re using pantry staples, you can use dried herbs. The flavor won’t be as strong, but the biscuits will still be good as long as you don’t substitute any of the other ingredients. My favorite is rosemary, but you can use whatever herb you like.

Biscuit Mix

Using Bisquick for these makes this recipe so easy (not an ad, but could be…). I use the Bisquick baking and pancake mix (there is a mix for just pancakes–this is their original baking mix). I always have a box in my pantry for recipes like this! If you’re one of the haters, swap out the Bisquick for your favorite alternative. Use the amount of Greek yogurt in place of the milk/water that your mix needs. You should be able to make it work! 

The Secret Ingredient

I stumbled on this hack to make incredibly creamy rich biscuits one day soon after getting married. We lived in a one bedroom apartment and had only adopted two of our three cats. I didn’t have any milk to make biscuits, but I did have some plain Greek yogurt. I added yogurt in place of the milk and my new favorite biscuit was created!

Cheddar Herb Biscuits

These easy cheddar herb biscuits are the perfect side for any meal.

4 oz cheddar cheese

2 ¼ cups Bisquick

⅔ cups Greek yogurt

¼ cup chopped herb of choice

Pinch of salt

2 Tbsp milk, if needed

Preheat oven to 450. Line a baking sheet with parchment paper.

Add shredded cheese, Bisquick, Greek yogurt, chopped herbs, and salt to a mixing bowl. 

Stir until blended. Add milk if the dough is too dry or more Bisquick if it’s too wet. The dough should be scoopable and hold its shape and be able to stick together without falling apart.

Using a tablespoon or small ice cream scoop, scoop about ¼ dough and drop onto the baking sheet.

Bake for 8-10 minutes, until golden brown. 

Remove from the tray and serve hot.

Notes:

The biscuits may stick a little to an ungreased pan because of the melted cheese. I like to use parchment paper for a better bake, but you can use a non-stick baking spray in a pinch.

I like to flip the biscuits on their sides within a couple of minutes of taking them out of the oven to avoid over-browning the bottoms.
